Spicy Pork

Method

• Heat a heavy-based frying pan

Lightly spray the pan with the oil

Add the garlic, onion, turmeric, cumin and ginger to the pan and cook over moderate heat for 5 minutes

Stir occasionally

Add the pork, tomato puree, stock and fruit

Cook, stirring occasionally, until the pork is tender (about 45 to 60 minutes).

• 500g New Zealand Trim Pork rump steak, diced

Canola oil or rice bran oil spray

2 teaspoons crushed garlic

1 onion, chopped

1 teaspoon turmeric

1/2 teaspoon ground cumin

1/2 teaspoon ground ginger

1 cup tomato puree

1 cup chicken stock

1 cup canned fruit in juice, drained and diced [apricots, pineapple, mango or apple].
