Spicy Pork
Method
• Heat a heavy-based frying pan
• Lightly spray the pan with the oil
• Add the garlic, onion, turmeric, cumin and ginger to the pan and cook over moderate heat for 5 minutes
• Stir occasionally
• Add the pork, tomato puree, stock and fruit
• Cook, stirring occasionally, until the pork is tender (about 45 to 60 minutes).
Ingredients
• 500g New Zealand Trim Pork rump steak, diced
• Canola oil or rice bran oil spray
• 2 teaspoons crushed garlic
• 1 onion, chopped
• 1 teaspoon turmeric
• 1/2 teaspoon ground cumin
• 1/2 teaspoon ground ginger
• 1 cup tomato puree
• 1 cup chicken stock
• 1 cup canned fruit in juice, drained and diced [apricots, pineapple, mango or apple].
