Roast New Zealand Pork Loin

Ingredients

• 1kg New Zealand Trim Pork loin

3 tablespoons chunky marmalade

2 tablespoons prepared mustard, optional

1 tablespoon white wine.

Method

• Preheat oven to 160ºC

Place the pork on a rack in a roasting dish

Mix the marmalade, mustard and white wine together and spread over the pork

Cook until the juices run clear, approximately 45 minutes, brushing occasionally with the glaze

Stand 10 minutes before carving.
