Roast New Zealand Pork Loin
Ingredients
• 1kg New Zealand Trim Pork loin
• 3 tablespoons chunky marmalade
• 2 tablespoons prepared mustard, optional
• 1 tablespoon white wine.
Method
• Preheat oven to 160ºC
• Place the pork on a rack in a roasting dish
• Mix the marmalade, mustard and white wine together and spread over the pork
• Cook until the juices run clear, approximately 45 minutes, brushing occasionally with the glaze
• Stand 10 minutes before carving.
