Salmon dip

Makes approx 2 cups

  • 1 pottle of low fat cottage or ricotta cheese
  • 1 can salmon (210 grams), drained & flaked
  • 2 tablespoons freshly chopped herbs e.g. parsley
  • 2 spring onions finely chopped
  • Freshly ground black pepper
  • Drop of Tabasco sauce
  • 1 teaspoon tomato paste

Mix all ingredients.

Chill well before serving with high fibre bread, low fat crackers or as a spread on sandwiches or toast.
