Avocado and Bacon Dip

Ingredients

  • 1 ripe Avocado
  • 1/4 tsp chilli sauce
  • 1/2 cup low fat Sour Cream
  • A squeeze of Lemon Juice
  • Several rashers of lean bacon, grilled and chopped finely
  • 1 tablespoon of finely chopped onion sweated in microwave or saucepan with a very small dash of olive or avocado oil
  • 2 tablespoons of cucumber, finely diced

Peel the avocado and mash the flesh lightly with a fork (should still be chunky). Add the lemon or lime juice and sour cream, mixing lightly but well. Mix in the remaining ingredients. Cover and chill.

Dip with: celery, finely sliced pita bread, sliced capsicums, raw cauliflower or broccoli, sliced radishes, low fat crackers, or french bread cut finely and baked in a medium oven until crisp.
